LEMON PUDDING
Serves 6.
1 cup sugar
1/4 cup flour
Pinch salt
Zest of 1 lemon
2 egg yolks, beaten
1 cup milk, at room temperature
1/4 cup lemon juice
2 egg whites, stiffly beaten
Preheat oven to 350 degrees F. Combine sugar, flour, salt, and lemon
zest. Stir in egg yolks, milk, and lemon juice; mix thoroughly. Fold
in beaten egg whites.
Pour into ungreased 1-quart baking dish. Set dish in a pan of hot
water 1 inch deep. Bake 40 to 50 minutes, until lightly browned.
Per serving: 201 calories, 3 g fat, 76 mg cholesterol, 40 g
carbohydrates, trace fiber, 4 g protein, 41 mg sodium
